Cooking on the road update….

Hello friends!

After a spectacular night in Walnut Ridge, AR (what a rowdy bunch!) we set off for Norman, OK. The journey was a bit long so we decided to put the crock pot to use. I was searching for new recipes online when I discovered one for lasagna. I thought to myself, is lasagna in a crock pot really possible? I wasn’t sure. But I figured that even if the texture or consistency of the lasagna didn’t come out quite right, all of the ingredients would still taste delicious together.

I was right.

Here’s the recipe (keep in mind that I have a tiny crock pot):

1/2 pound (use however much you like) ground beef or turkey
lasagna noodles (a standard size crock pot calls for 12 noodles)
cottage cheese (probably 8 ounces for a reg. crock pot)
mozzarella cheese (1 small package I think)
tomato sauce
1 onion, diced

Two things that I left out:
parmesan cheese (in an effort to not spend a ton of money on cheese)
1 egg (I’m not sure how I would go about getting just one egg on the road)

Method:

According to the recipe, you’re supposed to brown the meat with the onion and spices of your choice and add the tomato sauce. Then you mix the cheeses and egg together in a separate bowl. You layer meat, cheese, and noodles, just like you would when making lasagna the traditional way.

Obviously, I couldn’t brown the meat. I threw some in the bottom of the pot, added onions, garlic, pepper, and sauce and mixed it up. Then I layered a bit of cottage cheese and mozzarella cheese and noodles. Then I repeated the process. We cooked it for a few hours and had it for dinner before out show in Norman, OK. It was a bit soupy, but the flavors were great. And it was quite filling. All in all, a success!
